aloo cutlets (aloo tikki)

  • 1.5 lb potatoes peeled
  • 1 tbsp oil
  • 0.5 tsp chili powder
  • 1 tsp red pepper flakes
  • 2 garlic cloves crushed
  • 0.5 tsp cumin seeds
  • 1 tsp crushed coriander seeds
  • 0.5 tsp turmeric
  • 1 tbsp chopped mint
  • 1 serrano diced
  • 1 tsp salt
  • 0.5 cup bread crumbs
  • 0.25 cup oil

  1. Bring about 6 cups of water to boil, add potatoes and cook for 10-15 min until just done (test by inserting fork, it should pass through easily).
  2. Drain and set aside, preferably a few hours in the fridge.
  3. Mash potatoes.
  4. Heat oil over low and add chili powder, red pepper flakes, garlic, cumin seeds, crushed coriander seeds, turmeric and serrano chili. Lightly fry for 2-3 min until fragrant.
  5. Allow spice mixture to cool, then add to potatoes.
  6. Add mint, salt and bread crumbs and mix thoroughly.
  7. Shape into 1/2 inch tick cutlet around 3 inches in diameter.
  8. Shallow fry the cutlets for 2-3 min on each side.
  9. Drain on a paper towel.
